Delicious Lazy T Ranch beef short ribs and chunks of butternut squash undergo a gradual simmering process with beer and diced tomatoes, resulting in the perfect beef recipe for Autumn or Winter.

Ingredients

Cowboy Beer-Braised Short Ribs Ingredients:

  • 4 to 5 lb. Lazy T Ranch bone-in beef short ribs, cut into 3-inch pieces
  • 2 sweet onions, thinly sliced
  • Sea salt and freshly ground pepper
  • 1 medium-sized butternut squash peeled and cut into chunks
  • 3 garlic cloves, sliced
  • 12 fl. oz. ale or dark beer of your choice
  • 4 Tbs. all-purpose flour
  • ¼ cup water
  • 1 can (14 1/2 oz.) diced plum tomatoes and juice.

Instructions

How to Cook Cowboy Beer-Braised Short Ribs:

  1. Preheat the broiler in your oven. Season the short ribs generously with salt and pepper on all sides. If needed, work in batches to arrange the ribs on a broiler pan, then slide the pan beneath the broiler. 
  2. Allow the ribs to broil, turning once, until they attain a rich brown color, approximately 3 minutes per side. Transfer the browned ribs to a slow cooker.
  3. Scatter the onions and garlic evenly over the ribs in the slow cooker. Add in the chunks of squash. Pour in the diced tomatoes along with their juices, as well as the ale. Cover the slow cooker and proceed with cooking, aiming for the point where the meat effortlessly separates from the bones and the squash reaches a tender consistency. This typically takes around 5 to 6 hours on the high setting, or approximately 7 to 8 hours on low.
  4. Gently transfer the ribs and squash to a shallow bowl or platter, covering them loosely with aluminum foil. Skim away any excess fat that may rest atop the sauce. Switch the slow cooker to the high-heat setting. 
  5. In a small bowl, blend the flour and water together using a whisk. Gradually incorporate this flour mixture into the sauce, allowing it to cook uncovered while stirring intermittently. After approximately 15 minutes, the sauce should attain a gentle thickening. 
  6. Add salt and pepper to taste. Spoon this luscious sauce over the ribs and squash, serving promptly.
