Here at Lazy T Ranch, where the horizon stretches as far as the eye can see, we've perfected a dish that's as hearty and bold as the cowboys who ride our ranges. Our Cowboy Chili isn't just a meal—it's a tradition, simmered with the spirit of the West and the finest cuts of beef raised right on our land. This recipe brings together robust flavors and the kind of warmth that you can only find in a cowboy’s welcome.

Ingredients

Cowboy Chili Ingredients:

  • 2 lbs of Lazy T Ranch ground beef
  • 1 large onion, diced
  • 2 cloves of garlic, minced
  • 2 cans (15 oz each) of kidney beans, rinsed and drained
  • 1 can (28 oz) of diced tomatoes, with juice
  • 1 can (6 oz) of tomato paste
  • 2 tablespoons of chili powder
  • 1 teaspoon of ground cumin
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of cayenne pepper (adjust to taste)
  • Salt and freshly ground black pepper to taste
  • 1 cup of beef broth
  • Optional garnishes: shredded cheese, sour cream, chopped green onions

Instructions

How to Cook Cowboy Chili:

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat until it's no longer pink. Drain any excess fat.
  2. Add the diced onion and minced garlic to the pot with the beef, cooking until the onion is translucent.
  3. Stir in the kidney beans, diced tomatoes with their juice, tomato paste, chili powder, cumin, smoked paprika, cayenne pepper, and season with salt and pepper.
  4. Pour in the beef broth and bring the mixture to a simmer. Reduce the heat to low and let the chili simmer, uncovered, for about 1.5 hours. Stir occasionally, adding more broth or water if the chili gets too thick for your liking.
  5. Serve the chili hot, with optional garnishes like shredded cheese, sour cream, and chopped green onions.
