- 2 lbs Sierra Steak from Lazy T Ranch
- 2 tsp coarse sea salt
- 1 tsp ground black pepper
- 1/2 cup olive oil, plus more for grilling
- 8 corn tortillas, warmed
- 1 cup red onion, finely sliced
- 1 cup fresh cilantro, roughly chopped
- 2 limes, cut into wedges
- Chimichurri:
- 1 cup fresh parsley
- 1/4 cup fresh cilantro
- 3 cloves garlic, minced
- 1/2 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp sea salt
- 1/4 tsp red pepper flakes
Instructions
How to Cook Sierra Steak Tacos with Chimichurri:
- Prepare the Chimichurri: In a bowl, combine parsley, cilantro, garlic, olive oil, red wine vinegar, sea salt, and red pepper flakes. Mix well and set aside for the flavors to meld.
- Season the Steak: Season the Sierra Steak generously with coarse sea salt and black pepper. Let it sit at room temperature for about 15 minutes.
- Grill the Steak: Preheat your grill to a high heat. Brush the steaks with olive oil and grill for about 5-7 minutes on each side for medium-rare. Let the steak rest for 10 minutes, then slice thinly against the grain.
- Assemble the Tacos: Place slices of steak on warmed corn tortillas. Top with sliced red onion, chopped cilantro, and a generous drizzle of the chimichurri sauce. Serve with lime wedges on the side.
