Here at Lazy T Ranch, where the spirit of the West is alive and thriving, we know a thing or two about cooking up a feast that speaks to the soul. Today, we're sharing a little piece of that heritage with you through our Sierra Steak Tacos with Chimichurri—a dish that'll bring the bold flavors of the Wyoming plains right to your table.

Sierra Steak Tacos with Chimichurri Ingredients:

  • 2 lbs Sierra Steak from Lazy T Ranch
  • 2 tsp coarse sea salt
  • 1 tsp ground black pepper
  • 1/2 cup olive oil, plus more for grilling
  • 8 corn tortillas, warmed
  • 1 cup red onion, finely sliced
  • 1 cup fresh cilantro, roughly chopped
  • 2 limes, cut into wedges
  • Chimichurri:
  • 1 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 3 cloves garlic, minced
  • 1/2 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp sea salt
  • 1/4 tsp red pepper flakes

How to Cook Sierra Steak Tacos with Chimichurri:

  1. Prepare the Chimichurri: In a bowl, combine parsley, cilantro, garlic, olive oil, red wine vinegar, sea salt, and red pepper flakes. Mix well and set aside for the flavors to meld.
  2. Season the Steak: Season the Sierra Steak generously with coarse sea salt and black pepper. Let it sit at room temperature for about 15 minutes.
  3. Grill the Steak: Preheat your grill to a high heat. Brush the steaks with olive oil and grill for about 5-7 minutes on each side for medium-rare. Let the steak rest for 10 minutes, then slice thinly against the grain.
  4. Assemble the Tacos: Place slices of steak on warmed corn tortillas. Top with sliced red onion, chopped cilantro, and a generous drizzle of the chimichurri sauce. Serve with lime wedges on the side.
